Lately, I’ve been obsessed with all things sorbet. This tends to happen every year when the weather is nice and the temperature high.

Sorbets are great frozen treats – refreshing, light, sweet, but not too sweet. Everything you want from a summer dessert, basically.

I make them with seasonal fruits for better flavors and sweetness and they never disappoint. They are my trusty summer treats. Sure, I also make frozen yogurt and ice cream. But the simplicity and yumminess of sorbets have a special place in my heart.

And everybody seems to agree with me. When I shared my mango sorbet and my lemon blueberry sorbet on Instagram, everybody went crazy about them. Since then, I also made this strawberry sorbet. This one received a lot of love, too.  Love the sorbet love <3

And then, per your request, I’ve made pineapple sorbet.

I expected it to be tasty, but I didn’t expect it to be THIS tasty.  It tastes like Dole Whip! YUM. But it’s nothing like Dole Whip when it comes to calories and ingredients. This pineapple sorbet is clean, healthy, sugar-free, dairy-free, low-carb, vegan, and very easy to make.

HOW TO MAKE PINEAPPLE SORBET

Spoiler alert: making pineapple sorbet is incredibly easy.  First, you don’t even need an ice cream maker to make this sorbet. I like my sorbet ice cream maker free so everybody can make it. Basically, you’ll learn how to make sorbet in a blender. You’ll need a heavy duty blender for this recipe!  I use my food processor, but you could also use a heavy duty blender, like this one.

To make sorbet the healthy way, you need frozen fruit (as opposed to fruit juice). So…

  1. line a baking sheet with parchment paper;
  2. cut the pineapple into cubes (how to cut pineapple tips are below);
  3. place the cubed pineapple on the baking sheet and make sure you leave enough space between the cubes – the pineapple cubes shouldn’t be touching, otherwise, you’ll end up with a giant glob of frozen pineapple;
  4. freeze overnight or for at least 3-4 hours.

Just a quick FYI – after making the pineapple sorbet, you’ll be looking at a soft sorbet texture. I personally love it but if you want your sorbet to be more firm, transfer it to the freezer for 30 minutes to an hour. You can also use this trick when the sorbet gets too slushy. The sorbet will re-solidify and it will be perfect again.

ALSO: you can totally buy re-cur or pre-frozen pineapple from the store and skip the step of cutting your own pineapple.  I prefer to cut my own because it’s not hard to do and fresh pineapple is easier to pick out and make sure it’s sweet.

WHAT IS SORBET?

If you’ve never made your own sorbet at home or homemade ice cream, let me just say you’re in for a very delicious treat. And, if you follow my healthy sorbet recipe, a very healthy one, too.  That’s not the case with all sorbet recipes, though. Typically, sorbet is made with fruit juice + water + sugar. A TON of sugar — and that’s not even mentioning that fruit juice is usually loaded with a ton of sugar.  Ugh.

Sorbet is different than ice cream because it’s not made with cream or milk. And, it might sound healthier than ice cream but, unless you make it yourself, it really isn’t. Sadly, and shockingly, store-bought sorbet usually contains way more sugar than ice cream.

THE DIFFERENCE BETWEEN SORBET AND SHERBET

Sorbet and sherbet are not the same thing, either. They are different but not as different as ice cream and sorbet. In fact, sherbet stands somewhere in the middle. It has a bit of cream so it’s not a sorbet, but not enough cream to call it ice cream.  It’s kinda like if ice cream and sorbet had a baby.

DOES PINEAPPLE HAVE HEALTH BENEFITS?

Making healthy sorbet is a great way to turn seasonal fruits into delicious treats. And to get many health benefits at the same time. With this pineapple sorbet, you’ll get all the wonderful pineapple health benefits including…

  • 131% of the recommended daily dose of vitamin C – vitamin C prevents immune system deficiencies and forms an important protein that maintains the health of our skin, eyes, tendons, ligaments, and blood vessels;
  • high amounts of manganese, which is important for antioxidant defense but also 2 other minerals – calcium and iron;
  • high amounts of thiamin – a B vitamin that boosts energy levels;
  • dietary fiber, which helps digestion.

Despite its sweetness, pineapple is…

  • low in sugar;
  • low in calories (82 calories per cup);
  • fat-free.

HOW TO CUT A PINEAPPLE

It’s pretty common to be intimidated by cutting a pineapple.  Fortunately, once you know the simple steps, you’ll be all set for how to cut your own pineapple for this tasty pineapple sorbet recipe.

  1. lay the pineapple on its side on a cutting board;
  2. slice off the top and the bottom – about 1/2- inch from the top and same for the bottom;
  3. place the pineapple on the bottom side and trim the thick fibrous skin around the outer edge, starting from top to bottom;
  4. then, following the natural curve of the pineapple, cut around it until the skin is removed;
  5. with a sharp knife, remove the “pineapple eyes” left in the flesh;
  6. when making pineapple cubes, cut the pineapple in half lengthwise;
  7. then cut each piece in half again;
  8. cut off the fibrous core at a diagonal
  9. finally, cut each pineapple quarter into bite-sized cubes.

CAN I USE A PRE-CUT OR FROZEN PINEAPPLE FOR SORBET

You can use frozen pineapple or pre-cut pineapple to make this pineapple sorbet. The reason I don’t is that I prefer to pick out my fruit and to make sure it’s ripe, sweet, and juicy. That’s impossible if you’re using pre-cut or frozen pineapple. However, if you’re in a hurry or you don’t have fresh fruit, you can totally do it and save some time.

A HEALTHY HOMEMADE DOLE WHIP COPYCAT RECIPE!

We got back from a 2-week Disney vacation in Orlando and saw first-hand how many people absolutely LOVE Dole Whip.  I mean there’s never NOT a line to pay $$$$ for it.  Granted, Dole Whip was created by Dole, the fruit company, but Disney made it super popular. A trip to Disneyland or Disney World without Dole Whip ice cream seems almost impossible. Especially during summer.

alas, the problem with the Dole Whip is, sadly, it’s not at all healthy. It’s acceptable to eat it at a Disney park during cheat days or as just a special treat with the family, but, if you want to recreate it at home, it’s super easy to make it healthy and that allows you to enjoy it even more often. In this way, you won’t have to wait for your next trip to Disneyland or buy Dole Whip mixes full of sugar from the grocery store.

Also, there are many copycat Dole Whip recipes you can try, though most of them are also not very healthy, unfortunately. But this pineapple sorbet is, my friends AND it’s sugar-free! You can make it and enjoy it guilt-free any time you want and it actually tastes like Dole Whip! Hooray!

PINEAPPLE SORBET INGREDIENTS

It’s time for the most important question – how to make sorbet without sugar. Since the sorbet ingredients list is very short, skipping sugar doesn’t seem like a good option. But it actually is, especially if you use fresh, seasonal fruits that are sweeter and tastier than off-season fruits.

You can also use a healthy sugar substitute, like raw honey if you want the sorbet to be sweeter or if the fruit is not sweet enough. Or maple syrup if you want to make the healthy sorbet vegan.

The sorbet ingredients I use for this homemade pineapple sorbet are:

  • fresh pineapple;
  • freshly squeezed lime juice.

For. REALZ.  Just those 2 ingredients.

HOW TO MAKE PINEAPPLE SORBET WITHOUT AN ICE CREAM MAKER

We finally reached the easy-peasy steps for how to make sorbet. So get your heavy duty blender or food processor, pineapple, and lime juice ready and let’s go through these easy steps together:

  1. place the frozen pineapple into the bowl of the heavy duty blender or food processor;
  2. pulse until the frozen pineapple becomes crumbly;
  3. add lime juice and pulse again.
  4. if you want the pineapple sorbet to become fluid faster, you can add a little warm water. Just enough to loosen, not to make the texture become slushy.

If you follow these easy steps for how to make sorbet, you can make any type of healthy sorbet you want, not just this pineapple sorbet recipe. Mind: Blown!

HOW TO STORE HOMEMADE PINEAPPLE SORBET

Since your pineapple sorbet is now done, you can…

  • serve it immediately;
  • or store it in the freezer.

To store, place the sorbet in a freezer-safe airtight container and keep in the freezer for up to 2-3 weeks.

2-Ingredient Pineapple Sorbet AKA Healthy Dole Whip

This Sugar-Free Pineapple Sorbet tastes like dole whip, but is healthier and doesn't require a trip to Disney World.  Only 2 ingredients needed and just 45 calories per serving!

  • 4 1/2 cups fresh, ripe pineapple, (cubed (1 large pineapple))
  • 1 tbsp freshly squeezed lime juice
  1. Line a baking sheet with parchment paper and set aside. Cut pineapple into cubes using instructions above or in the video.

  2. Place the cubed pineapple onto the baking sheet, leaving space in between the cubes to allow for even freezing and not touching so they don’t create a giant glob of frozen cantaloupe.

  3. Place the tray into the freezer and freeze the pineapple overnight, or until completely frozen – at least 3-4 hours.

  4. Place the frozen pineapple into the bowl of a food processor and allow to thaw for 10-15 minutes until softens. Pulse until the pineapple becomes crumbly.

  5. Add the lime juice and then pulse again. You may need to add a little warm water until the mixture becomes more fluid, but not slushy. Or you can allow the pineapple to thaw a little more to soften. You're looking for a soft serve texture at this point.

  6. Taste and add any honey, as needed, at this time if it needs to be a little sweeter.
  7. If the mixture becomes too slushy and does not resemble sorbet, you can return to the freezer for 30 min. to an hour to allow it to re-solidify.
  8. Serve immediately, or store in the freezer in an airtight container for up to 2 weeks.
