Coconut Vanilla Breakfast Granola Cups

If you’ve ever wanted an easy, make-in-advance breakfast recipe that could also be a delicious snack or dessert, these delicious Coconut Vanilla Breakfast Granola Cups are for you! These granola cups are made with Dannon Light & Fit Toasted Coconut Vanilla nonfat yogurt, which contain 12g of protein and 80 calories per 5.3 oz. serving. They’re great for keeping on hand throughout the week!

Coconut Vanilla Breakfast Granola Cups

Coconut Vanilla Breakfast Granola Cups that can be made in advance and stored in the refrigerator for 3-5 days. Great as an easy breakfast or snack recipe!

  • 5 dates (pitted)
  • 1/4 cup honey
  • 1 Tbsp coconut oil
  • 1 cup rolled oats
  • 1 Tbsp chia seeds
  • 1 Tbsp ground flax seed
  • 1/2 cup Light & Fit® Greek Toasted Coconut Vanilla Nonfat Yogurt
  • 1/4 cup blueberries
  • 1/4 cup raspberries
  1.  Preheat the oven to 350 degrees.

  2. In a food processor, blend the oats into a flour like texture, then set aside.

  3. Blend the pitted dates, honey, and coconut oil together into a paste texture.

  4. Add in the oat flour, chia seeds, and flax seed, then lightly blend to mix together. 

  5. Spoon the dough into an oiled cupcake pan, making about 6 granola cups.

  6. Press into the pan to create the cups and bake for about 15 minutes (or until the tops are lightly browned).

  7. Remove the granola cups from the pan and let cool!

  8. Fill each granola cup with yogurt and top with blueberries and raspberries.

  9. Serve and enjoy or refrigerate for later!

Easy-to-make Pineapple Coconut Vanilla Smoothie Recipe that’s great for a balanced breakfast on-the-go!

  • 1 cup Light & Fit® Greek Toasted Coconut Vanilla Nonfat Yogurt
  • 6 ice cubes frozen coconut milk (or almond milk)
  • 1/2 cup rolled oats
  • 1/4 cup vanilla protein powder
  • 1/2 cup pineapple chunks (frozen or fresh)
  • pineapple slices & coconut shavings for garnish (optional)
  1. Mix all of the ingredients (except for the garnish) together in the blender.

  2. Pour into two glasses, garnish if desired, and enjoy!
